Classic Pancakes with Maple Syrup

Ingredients:

  • 3 eggs
  • 1½ cups flour (I use whole wheat pastry flour)
  • 1 teaspoon baking soda
  • ¾ teaspoon salt
  • 1 tablespoon sugar
  • 1⅔ cup buttermilk
  • 3 tablespoons butter, melted

Instructions:

 

  1. Separate eggs; beat egg yolks.
  2. Sift dry ingredients; add alternately with buttermilk to the beaten egg yolks.
  3. Add melted butter.
  4. Beat egg whites and fold into the batter.
  5. Bake on hot griddle (400 degrees) until bubbles rise in the pancakes, about 3 minutes.
  6. Flip and cook another 2 minutes or until golden brown.
  7. Serve immediately.
