Homemade Ravioli Stuffed with Ricotta and Castelmagno

A classic Italian dish featuring fresh pasta stuffed with a rich blend of ricotta and Castelmagno cheese, finished with butter and Parmesan.

Ingredients:

For the Dough:

•3 ¼ cups (400 g) all-purpose flour

•4 large eggs

•1 pinch of salt

•1 tsp olive oil

For the Filling:

•9 oz (250 g) Castelmagno cheese, grated

•12 oz (350 g) ricotta cheese

•2 large eggs

•¼ tsp ground nutmeg

For Garnish:

•2 tbsp unsalted butter

•2 tbsp grated Parmesan cheese

Instructions:

Step 1: Make the Dough

1.On a clean surface, create a well with the flour. Crack eggs into the center, add a pinch of salt and olive oil.

2.Gradually mix the flour into the eggs until a firm dough forms. Knead until smooth, about 10 minutes. Wrap in plastic wrap and rest for 20 minutes.

Step 2: Prepare the Filling

3. In a bowl, mix grated Castelmagno, ricotta, eggs, and nutmeg until well combined. Roll the mixture into small balls, about the size of a hazelnut.

Step 3: Assemble the Ravioli

4. Divide the dough in half. Roll out one portion into a thin sheet.

5. Place the cheese filling balls evenly on the dough, leaving space between them.

6. Roll out the second portion of dough and lay it over the first sheet with filling.

7. Press gently around each ball to seal the edges. Cut into squares using a pizza cutter or knife.

Step 4: Cook the Ravioli

8. Bring a large pot of salted water to a boil. Cook ravioli for 6–7 minutes until they float to the surface.

9. Remove with a slotted spoon and transfer to a pan with melted butter.

Step 5: Serve

10. Sprinkle with grated Parmesan cheese and serve immediately.
