Ingredients:

For the Dressing:

•¼ cup balsamic vinegar

•¼ cup red wine vinegar

•2 tbsp honey

•1 tsp Dijon mustard

•1 tsp sugar

•¼ cup olive oil

•Salt and pepper to taste

For the Salad:

•7 oz (200 g) fresh spinach, washed and dried

•7 oz (200 g) fresh strawberries, hulled (small strawberries left whole, larger ones halved)

•1 tsp chia seeds (or poppy seeds)

•2 tbsp pumpkin seeds

Instructions:

Step 1: Make the Dressing

1.In a small bowl, whisk together the balsamic vinegar, red wine vinegar, honey, mustard, sugar, salt, and pepper.

2.Gradually add olive oil while whisking continuously until emulsified.

Step 2: Prepare the Salad

3. Wash and dry the spinach leaves thoroughly.

4. Hull the strawberries. Leave small ones whole and slice larger berries in half.

Step 3: Assemble the Salad

5. In a large bowl, combine the spinach and strawberries. Drizzle 2 tablespoons of the dressing over the salad and toss gently to coat. Taste and add more dressing if needed.
