Lazy Dumplings with Curd

When you haven’t even fully opened your eyes yet, but mom doesn’t let you leave the table until you’ve eaten “at least three dumplings”—because you can’t sit in class hungry! They’re quick, delicious, and can be made in bulk, frozen, and cooked as needed—no more boring sandwiches for breakfast!

Ingredients:

Main Ingredients:

  • 300 g cottage cheese
  • 1 tbsp sugar
  • 0.5 tsp salt
  • 1 egg yolk
  • 5 tbsp flour

Additional Ingredients:

  • 1 tbsp butter
  • 1 tbsp honey
  • 2 tbsp berries or fruits

Instructions:

  1. Bring a pot of salted water to a boil.
  2. For the dough, mash the cottage cheese with the egg yolk, sugar, and salt until smooth, making sure to remove any lumps.
  3. Gradually add flour, mixing well each time, until the dough no longer sticks excessively to your hands.
  4. Sprinkle a little flour on the table, place the dough on it, and divide it into small pieces. Coat each piece in flour, roll them into sausages about 2 cm in diameter, and then cut them into small pieces.
  5. Place the lazy dumplings into the boiling water and cook until they float to the surface. Remove them with a sieve or slotted spoon.
  6. Melt the butter and pour it over the dumplings.
  7. Serve with sour cream, honey, and berries.
