•¾ cup (3 oz) cornstarch

•3 ½ oz tuna fillet, minced

•1 oz smoked bamboo stalk, finely chopped

•1 tsp fresh cilantro, chopped

•2 tsp soy sauce

•½ oz leek, finely chopped

•½ tsp ground coriander

For Khoi Sauce:

•5 tbsp soy sauce

•2 tsp fresh lime juice

•1 tsp green onion, finely chopped

•½ tsp fresh cilantro, finely chopped

•½ tsp ground black pepper

•½ tsp ground coriander

•2 tsp honey

•1 tsp garlic, minced

•1 tsp fresh ginger, minced

•½ tsp sesame oil

Instructions:

To Prepare the Dough:

1.Combine the flour and cornstarch in a bowl.

2.Blend spinach with water until smooth. Heat the spinach mixture until boiling.

3.Gradually pour the hot spinach liquid into the dry ingredients, mixing well. Knead the dough until smooth and elastic.

To Prepare the Filling:

4. Mince the tuna, bamboo stalks, leek, and cilantro.

5. Add soy sauce and ground coriander to the mixture. Combine well until evenly incorporated.

To Shape the Dim Sum:
