Goris-Style Baklava

Traditional Armenian Baklava with Walnuts and Honey

Ingredients:

For the Dough:

•5 large egg whites

•1 ¾ cups (400 g) unsalted butter, melted

•1 ½ cups (350 ml) warm water

•1 tsp (10 g) salt

•2 tsp (20 g) honey

•2 tbsp (30 g) grape vinegar

•All-purpose flour, as needed (approximately 4–5 cups)

For the Filling:

•2 cups (500 g) chopped walnuts

•1 ¼ cups (250 g) sugar

•2 tsp (10 g) ground cinnamon

•1 tsp (10 g) ground cardamom

For the Topping and Glaze:

•5 large egg yolks

•½ cup (120 ml) melted butter

•2 tbsp (30 g) honey

Instructions:

Step 1: Prepare the Dough

1.In a large bowl, whisk the egg whites with butter, water, salt, and vinegar until smooth.

2.Gradually sift in flour and mix until a soft, non-sticky dough forms. Knead until smooth and elastic.

3.Divide the dough into 3 equal portions, shape into rounds, and brush with melted butter.

4.Fold each round into a square, refrigerate for 30 minutes, and repeat the buttering and folding process one more time.

Step 2: Prepare the Filling

5. Whisk the remaining egg whites with sugar until stiff peaks form.

6. Gently fold in cinnamon and cardamom to create a spiced meringue mixture.

Step 3: Assemble the Baklava

7. Roll out the first portion of dough into a thin sheet and bake at 300°F (150°C) until lightly golden. Set aside.

8. Roll out the second portion of dough and place it in a greased baking pan. Spread half of the meringue mixture evenly over the dough, then sprinkle with half of the walnuts.

9. Place the pre-baked dough layer on top, spread with the remaining meringue, and sprinkle with the rest of the walnuts.

10. Roll out the third portion of dough and place it over the filling. Pinch the edges to seal and brush the top with beaten egg yolks.

Step 4: Bake the Baklava

11. Score the top layer into diamond shapes using a sharp knife.

12. Bake at 300°F (150°C) for 1 hour, or until golden brown.

Step 5: Glaze and Serve

13. Pour melted butter and honey evenly over the hot baklava. Allow to cool slightly.

14. Slice along the pre-scored lines and serve warm or at room temperature.
