Danny Chaney, an American chef who started out washing dishes to buy a new skateboard, has cooked for the prime minister of Bermuda and the sheikh of Dubai. He is the chef of Blue Butcher in Hong Kong.
My name is Danny Chaney, and I am the chef of Blue Butcher in Hong Kong. I have been cooking for 11 years. I used to cook for the prime minister of Bermuda and for the sheikh of Dubai. I won’t say their names; you can google them yourself, it’s easy.
My first job in a restaurant was washing dishes as a kid. I was into skateboarding and needed money for a new board, so I got a job as a dishwasher. That’s how it all started.
I came to Hong Kong from the USA. It is my home country, and I’m proud of it. I like a lot of American things, and my favorite cuisine is American. It’s all about grilling and smoking, which I love to cook and love to eat. That’s why I love American cuisine.
My favorite hobbies are fishing, skateboarding and playing darts, when I get the time! And I don’t have a lot of free time.
I’d like to wish readers to stay true to simple food and great ingredients.
For the photo I made my favorite dish on the menu: pig’s belly and cheek with lentils and Granny Smith apple slaw. I do recommend trying it. You won’t be sorry!
