Scrambled Eggs with Smoked Sausages

Today, Nadia, the chef of our project, decided to show how to make scrambled eggs with smoked sausages, tomatoes on a grill pan, and a salad mix. The perfect dish for a hearty breakfast.

Breakfast is the most important meal of the day. And it should be both delicious and nutritious, whether you’re having it at 7 AM or 2 PM. Whether you’re a morning person, a night owl, or somewhere in between, you should always make time for breakfast. This is what the author of today’s recipe, Nadia Garaža, believes.

I’ll be honest, I often write about food on an empty stomach. So, I’m wrapping this up and heading to make myself scrambled eggs using Nadia’s recipe.

Scrambled Eggs with Smoked Sausages

Breakfast is the most important meal of the day. That’s why it’s crucial for it to be not only filling but also incredibly tasty—after all, you want to start your day on a pleasant note! Today, we’ve prepared a simple recipe for scrambled eggs with smoked sausages.

Ingredients:

  • 2 eggs
  • 1 sprig thyme
  • 2 smoked hunter sausages
  • Salad mix (Lollo rosso, dill, frisée, parsley, basil)
  • 100g tomatoes (Black Prince variety)
  • 100g cherry tomatoes
  • Olive oil
  • Sunflower oil
  • Chili pepper
  • Calendula (for decoration)

Instructions:

  • Preheat a grill pan.
  • Make slits on the sausages.
  • Grill the sausages with halved Black Prince tomatoes and a sprig of cherry tomatoes.
  • In a separate pan, fry 2 eggs.
  • To cook the egg whites evenly, make a few punctures with a bamboo stick.
  • Once the egg whites set, add the thyme sprigs.
  • Use a metal round cutter, previously greased with sunflower oil, to cut the eggs into shape.
  • Tear the salad mix, dress it with olive oil and soy sauce.
  • Garnish the dish with calendula flowers and grilled chili peppers.
